This pioneering organic estate is reviving the traditional form of Lambrusco that has almost been forgotten. Bottle fermented, bone dry, and released after prolonged ageing on its lees. There is a real hit of doughy yeastiness and deep marmite-like umami from the lees ageing, lifted by fine bubbles and fine red fruit leading to a pleasingly compact finish that simply craves beautiful salumi. It is a great insider's tip for a pizza or a barbecue.
