Itsas Mendi Bizkaiko Txakolina Bat Berri 2020 Basque Country

Itsas Mendi describes the area where the Cantabrian sea (Itsas) meets mountain slopes (Mendi). They farm native Basque varieties in Bizkaiko Txakolina DO, a much smaller defined area than the more often encountered Getariako Txakolina DO. This is a really unique skin contact white because it also employs carbonic maceration (a process more associated with red grapes in Beaujolais) to fascinating and delicious effect. One to try with Calcots and Romesco sauce!
