Today run by Eve Perchaud and founded by her great-grandfather, this is quintessential Chablis in the most useful size bottle. Whispers of wet stone and chalk alongside the fresh scent when peeling an apple transport you instantly to this cool region in Burgundy's far north. Chardonnay at its leanest and freshest, but still with a lovely milkiness rather than creaminess. Enjoy with some dressed crab or fat prawns cooked in garlic.
