On a sunny site in Kent, Nicholas Hall carries on the farming legacy established by his great-grandfather, Herbert Hall. Using organic practices, together with the principal Champagne grapes of Chardonnay, Pinot Noir, and Pinot Meunier, Nicholas and Kirsty Smith make exceptional sparkling wines. Just ask the King, whose Highgrove brand has its own cuvee. This Brut is part-fermented in tank for freshness and barrel for structure. The result is a distinctive English sparkling wine -- apple-y and crisp with a hint of nettle, alongside a touch of hazelnut and white chocolate. Superbly refreshing and deliciously complex.
