Kingston Black, with its natural balance of fruit, tannin, acid and sugars, is often said to be one of the few apples that can truly excel as a single variety cider. To keep its purity the cider was kept out of barrels throughout the making process and, to give a fine sparkle, it was bottle conditioned. Creamy ripe cheeses, roasted vegetable dishes and fatty meats like pork and lamb are brilliant with this.
