Sato Riesling 2020 Central Otago New Zealand

Established in 2009 in Central Otago by former Tokyo- and London-based bankers, Yoshiaki and Kyoko Sato, after training with French winemakers, Sato Wines strives to impart low-intervention principles to their winemaking and uses grapes from organic and biodynamic growers. Dry and minerally as a clean board of slate, this Riesling opens up like a blossoming flower, with the notes and aromas blooming from rubber bands to fresh grass (but then dried hay) to orchard fruit to sour plums to dried Thai lime leaves to bread and honey.
