One of the very first gins of the current gin boom, Ian Hart has been making Sacred since 2008. Distilled under vacuum to give purer flavours, initially in the front room of his home in Highgate, they have now moved to distillery premises, but the spirit and quality of the gin remains unchanged. The unique distillation process here results in a gin of purity and subtlety, which in our view works best in spirit-heavy cocktails like the Martini or citrus-forward cocktails like a White Lady, rather than as a long drink mixed with tonic. The Sacred name, incidicentally, comes from the inclusion of the highly precious resin of frankincense, which is part of the botanical recipe and which Ian acquires from the Sultan of Oman.
