Apostolos Thymiopoulos’s winery is situated just outside Naoussa in the small village of Trilofos. Since taking over in 2006, his wines have gone from strength to strength, demonstrating that the rather tannic xinomavro can be very approachable if carefully managed. He follows biodynamic principles, and in 2012, when an infestation of locusts threatened the grapes, he put 50 guinea fowl in the vineyards. After two weeks the locusts had been eradicated.
