Located in one of the least known wine-growing areas of France, between Burgundy, Alsace and Jura, the Guillaume vineyard has been in continuous cultivation since 1732. During the phylloxera crisis the Guillaume family quickly adapted to become one of the leading nurseries grafting vine on to phylloxera-resistant rootstock. The 40 hectares, including the superbly sited single vineyard used in the Collection wines, echo the limestone-marl slopes of neighbouring Burgundy. Alongside Pinot Noir and Chardonnay, he makes two delicious wines using the Savagnin grape: Païen, and Cuvée des Archevêques, made under flor as an unclassified vin jaune.
